In the same year, he acquired Mercado Juarez Mexican Café, preserving a beloved 42-year-old Tex-Mex institution with its two cherished locations.

But Marcus's impact extends far beyond the kitchen. Together with his wife Emily, he founded the Paslay Foundation in 2020, a nonprofit organization with a mission close to their hearts.
